Overview

Mini Corn Minigold F1 (Zea mays) is a productive baby corn variety grown for its slender, tender cobs. The miniature cobs are harvested when approximately 10cm long, before the kernels begin to swell.

When picked at the correct stage, the entire young cob is crisp and edible. Baby corn is delicious in stir-fries, salads and noodle dishes or lightly steamed and served as a side vegetable.

Minigold F1 is best grown in a warm, sunny and sheltered position. In cooler Irish conditions, starting the seeds under cover provides the plants with a useful head start.

Sowing Instructions

• Sow indoors in pots or deep modules during March and April.
• Sow one seed per pot at a depth of approximately 2–3cm.
• Keep warm and maintain even moisture until germination.
• Harden young plants off gradually before transplanting outdoors.
• Alternatively, sow outdoors in a prepared seedbed from mid-May, once the soil is warm and the risk of frost has passed.
• Transplant seedlings to their final positions after approximately five to six weeks.
• Allow approximately 25–30cm between plants and 45–60cm between rows.
• Plant in groups or short rows in a warm, sheltered position.

Growing Conditions and Care

Choose the warmest available position in full sun, protected from strong winds. Corn grows best in fertile, moisture-retentive soil with good drainage.

Prepare the soil by incorporating well-rotted compost or manure. Water regularly during dry periods, particularly while the plants are establishing and when the cobs begin to form.

Apply an organic mulch around the plants to conserve moisture and reduce competition from weeds. Earth soil up around the base of the stems as the plants grow to improve stability.

In cooler locations, Mini Corn Minigold can be grown in a greenhouse or polytunnel to provide additional warmth and protection.

Harvesting and Use

Harvest the miniature cobs from August to September, before the kernels begin to swell. The ideal cobs are approximately 10cm long, slender and firm.

Check the plants frequently once the silks appear, as baby corn develops quickly. Peel back a small section of the husk to check the size before harvesting.

Pick by twisting or cutting the young cob from the stem. Remove the outer husks and silks before use.

The entire tender cob can be eaten. Use freshly harvested baby corn in stir-fries, salads, noodle dishes and vegetable sides, or serve it lightly steamed as a crisp garnish.
